咸蛋蒸肉糜(加入一味辅料,就让蒸好的肉糜鲜嫩又多汁)

 

原料猪肉馅1碗、咸鸭蛋1个(咸鸡蛋也可)、豆腐1块、料酒、生抽、盐、糖、香油、葱姜

做法:

1、葱姜剁碎后,加入肉馅中,加入半勺料酒、一勺生抽、一点点盐、半小勺糖,适量香油,搅拌均匀后腌制10分钟

2、将豆腐捏碎放入肉馅中,和肉馅一起顺一个方向搅拌均匀,直到肉馅抱团上劲,放入一个碗中铺平

3、打一个咸蛋在肉馅上,放蒸锅大火15分钟(微波炉中高火有3分钟也好了,不过要先用牙签在咸蛋黄上戳几下)

 

小贴士:

1、拌肉馅的时候,不用加水,只需加入一块豆腐就可以使蒸好的肉馅鲜嫩多汁,肉馅和豆腐的比例为2:1,不吃肉的就做咸蛋蒸豆腐吧,一整块豆腐和咸蛋一起蒸也很好吃

2、拌肉馅的时候,只需加少许盐或者不加盐也可以,因为咸蛋已经很咸了

请恕俺是从村里来的,没见过世面,谁都别笑话,俺第一次见到,原来还有紫色的花菜,这年头紫色的东西真被整出不少来,紫薯、紫山药、紫土豆、紫花生……,当然身价也比普通颜色的稍贵,买这个花菜曾被太后极力反对,她以为这是另一起染色事件,呵呵,我却是被那一抹紫所吸引,我是紫色控有木有(当然我知道它和紫薯一样啦,富含花青素,是培育出来的)咸蛋蒸肉糜VS紫花椰炒脆藕 <wbr> <wbr> <wbr> <wbr>宿舍简餐族看过来

 

 一个朋友说她不喜欢吃花菜,是因为她炒的花菜很不入味,不但硬,还有一种奇怪的土腥味,当然,处理花菜也是有窍门的

 

让花菜更入味的小窍门?

 

1、花菜掰成小朵,不要用刀切,刀切容易碎,放清水中泡一刻钟,水中放一大勺盐,再漂洗干净(N年前有人告诉我花菜里有小虫子的事,简直是毛骨悚然啊咸蛋蒸肉糜VS紫花椰炒脆藕 <wbr> <wbr> <wbr> <wbr>宿舍简餐族看过来)

 

2、锅中加适量水,水中放一小勺醋,水开后将花菜放锅中焯一分钟,捞出后迅速放凉水中,花菜焯到断生即可,太烂影响口感,还会使花青素大量流失,迅速过凉可使花菜口感脆嫩,而焯水的时候放少许醋,可以去除花菜本身特殊土腥味,使其口感更好

3、急火快炒,并加入少许的红椒、蒜片,可以使花菜更入味,更鲜美

4、用藕片作辅料,脆爽的藕片增加了花菜的风味,非常好吃,

PS:切片的藕要迅速放水里浸泡,水里最好加几滴白醋,防止氧化变黑
