珍珠豆腐丸子 <wbr> <wbr> <wbr>炎炎夏日30道无油烟美食

 

 

 

珍珠豆腐丸子(炎炎夏日还是无油烟蒸菜更合我心珍珠豆腐丸子 <wbr> <wbr> <wbr>炎炎夏日30道无油烟美食

 

原料猪肉馅1碗、糯米、豆腐1块、料酒、生抽、盐、香油、葱姜等

 

做法:

1、糯米淘洗干净后,清水泡发几个小时沥干水分备用

2、葱姜剁碎后,加入肉馅中,加入半勺料酒、一勺生抽、半小勺盐,适量香油,搅拌均匀后腌制15分钟

2、将豆腐捏碎放入肉馅中,和肉馅一起顺一个方向搅拌均匀,直到肉馅抱团上劲

3、用手团一款肉馅,滚成圆形,然后放在糯米里,使肉馅表面粘满糯米粒,取一盘子,盘上刷一层薄油,将做好的丸子放在上面,然后放蒸锅大火烧开转中火25分钟,关火后焖10分钟

 

小贴士:

1、糯米一定要事先浸泡,否则蒸出的珍珠丸子米粒干硬,口感不好

2、拌肉馅的时候,不用加水,只需加入一块豆腐不但可以使蒸好的丸子鲜嫩多汁,还可以减少肉量的摄入,美味更健康,

3、肉馅和豆腐的比例为2:1比较好,太多的豆腐,丸子容易散

4、拌肉馅的时候,要顺一个方向搅打均匀,肉馅抱团上劲,加入豆腐也不容易散

5、在盘底刷一层薄油或是垫些菜叶,丸子蒸好后不会黏在盘底,吃的时候轻松,刷碗也轻松
