祖国风光(492)“狗不理”包子

 1、面粉加用温水调好的干酵母(按说明书),揉透。
2、做肉馅:好五花肉剁馅,加盐、胡椒、少许味精、小葱末、加一点点水(加菜就不加水)搅拌拌匀,反复多次,搅拌时最好朝一个方向,然后放冷藏室静置30分钟,即可。

注: 馅里加蔬菜的做法:我一般用青菜(小白菜,大白菜、芹菜也可以),烧一锅水,开,放青菜适量,变色捞出,放入旁边一大盆冷水里,及时冷却,(否则,青菜会黄),然后用手捞出挤干水分,剁碎,这样好剁多了,再挤干水分,拌油。和肉馅混合,拌匀!及时用!
