广东顺德寻觅'东方奶酪'双皮奶的制作小方法

在近代社会十分流行下午茶,起初的下午茶发展自英国维多利亚时代,一边喝着茶一边吃着西点,下午茶的形势也逐渐在全世界各地流行起来。

High tea has been very popular in modern societies. High tea originated from Victorian era in England: it's drinking tea while eating western snacks. High tea has since gradually become popular all over the world.

下午茶甜点就十分多样化,而中国的广式甜点就十分具有代表性,说到广式甜点就不得不提到是东方奶酪——顺德双皮奶,温润顺滑的双皮奶,入口香浓醇厚是必备的下午茶单品。

High tea desserts are very diversified, and they come in a variety of styles in China, among which Cantonese dessert is very representative. When it comes to Cantonese dessert, we have to mention the Shunde double-skinned milk, warm and smooth, and are regarded as the cheese from the East. Its rich and mellow taste makes the double-skinned milk a high tea must desert.

关于双皮奶的身世有一个传说。在顺德大良白石村有一户人家以养牛为生,并制作牛乳。当时没有电冰箱,这家人常为牛奶的保鲜保存绞尽脑汁。有一次,这家儿子试着将牛奶煮沸后保存,却意外地发现牛奶冷却后表面会结成一层薄衣,尝一口,无比软滑甘香。

Stories have it that in Daliang Baishi Village, Shunde, there lives a family that raises cattle for a living and produces dairy-based products. At that time, there was no refrigerator, and the family often racked their brains out for preservation of their milk. On one occasion, the son tried to boil the milk and keep it for longer, but unexpectedly found that the surface of the milk, after cooling, would form a thin layer of skin, tasting incredibly soft and sweet.

一试再试,制成了最初的双皮奶。而如今双皮奶在广式甜品中有着不可撼动的地位。在2013年初,双皮奶制作技艺还被列入顺德区非物质文化遗产名录。为了吃到正宗的双皮奶,不少游客和海外游子不远万里慕名来到顺德,就是为了享用这一口顺滑。这就是双皮奶的前世今生。

If they put this product back to steam for 15 minutes, another layer of skin would form hence come the famous 'Double-skinned milk'. It was invented by accident. Now double-skinned milk has an unshakable position in Cantonese desserts. In early 2013, the production method of the double-skinned milk was also included in the list of intangible cultural heritages in Shunde District. In order to taste this authentic double-skinned milk, many tourists come to Shunde travelling thousands of miles to enjoy it. 

为了探寻双皮奶的做法我特意来到了顺德的牛乳街,向一家甜品作坊,迎滨甜品屋的老板梁姨请教了关于双皮奶的做法,其实方法简单易学。观看视频以后,在家,你也可以自己动手烹制哦。

In order to discover the authentic way of making the double-skinned milk, I specially travelled to this street called 'the Dairy street' in Shunde, and consulted Aunt Liang, the owner of a dessert workshop 'Yingbin dessert house', about the making of double-skinned milk. 制作美味双皮奶所需材料非常简单易找:

1.   新鲜的水牛奶

2.   鸡蛋数只并将蛋清和蛋黄分离

3.   白糖

The ingredients for making this delicious double-skinned milk are very simple and easy to find:

1. Fresh buffalo milk

2. Eggs and separate the egg white from the yolk

3. sugar
