来,一起吃顿小龙虾

1. Shrimp?lobster?crawfish?傻傻分不清

  • Shrimp是我们在食堂或家里做饭经常吃到的虾,煮熟了会变红。

  • Lobster就是大龙虾,龙虾的头胸部较粗大,外壳坚硬,色彩斑斓,腹部短小,体长一般在20~40厘米之间,重0.5公斤上下,是虾类中最大的一类。

  • Crawfish是中国人酷爱吃的小龙虾。它跟龙虾的形状类似,但是体积小很多。

2. 小龙虾的口味:

  • Garlic crawfish:蒜香小龙虾

  • Spicy crawfish:麻辣小龙虾

  • Thirteen-spices crawfish:十三香(卤)小龙虾

  • Steamed crawfish:清蒸小龙虾

  • Iced crawfish:冰镇小龙虾

3. 自己做一顿小龙虾吧

  • Buy live crawfish

    购买新鲜小龙虾

  • Plan on ordering enough crawfish so that each person at your party ordinner gets 2 - 3 pounds. Most of the weight will get discarded since crawfish come with their shells on.

    Keep them cool, away from light and heat

  • Wash the crawfish

    清洗小龙虾

  • Put crawfish into a large bin, and fill it with clean water.

    将小龙虾放到大的容器中,注入清水。

  • Use a paddle to stir the crawfish, then let them sit in the water for 30 minutes.

    搅动小龙虾,然后水中静置30分钟。

  • Discard the dead crawfish, which will float to the top after a few minutes.

    几分钟后死掉的小龙虾会漂浮在水面上,扔掉它们。

  • Strain the water and rinse the crawfish with clean water. Keep them in a shady spot until you're ready to boil them.

  • Light the cooking flame

  • Fill a 60-gallon (227.1 L) pot halfway with water. Put it on the burner or stove and let it heat to a boil. Stir in the following ingredients, then let it come back to a boil:

    The juice of 8 lemons, and the lemon peels.

  • Add the vegetables

    加入蔬菜 

  • Crawfish boils are delicious with many kind of vegetables, but the most popular staples are potatoes and corn. Once the pot has come back to a rolling boil, add the following ingredients:

    小龙虾跟很多蔬菜一起烹饪都很美味,但是最受欢迎的蔬菜是土豆和玉米。国内的水再次滚起来,加入以下原料:

    8 onions, peeled and halves

    8个洋葱,剥皮,对半切开

    10 pounds of new potatoes (or regular potatoes, chopped into  bite-sized chunks.

    10磅的新土豆(或者普通土豆,切成小块)

    20 ears of corn, shucked and halved

    20根玉米,剥皮,切块。

    40 cloves of garlic, peeled

    40瓣蒜,剥皮

  • Cooking the Crawfish

    烹饪小龙虾

  • Lower the crawfish into the boil. Place the crawfish in a crawfish basket, made out of wire with a handle for lowering it into the pot. Crawfish baskets are used so that the crawfish can boil in the top part of the water while the vegetables cook underneath. Let the crawfish boil in the waterfor 5 minutes.

    将小龙虾放到锅中。首先将小龙虾放到特制的篮子中,篮子由金属丝编成,带把手,可以放到锅中。使用该篮子可以让小龙虾在烹饪的过程中位于蔬菜上方。让小龙虾在水中大火煮5分钟。

  • If you have a large strainer that fits over the top of the pot, this can be used as a substitute for the crawfish basket.

    如果有一个较大的滤器,可以刚好卡在锅口,也可以代替篮子使用。

  • Turn off the heat and let the crawfish cook. 5 minutes later, turn off the heat and put the lid on top to allow the crawfish to cook gently for another 30 minutes.

    关火,小龙虾入味。5分钟后,关火,盖上盖子,闷30分钟。

  • Check the crawfish. After 30 minutes, remove the lid and check to see if the crawfish are done. The best way to tell is by removinga crawfish and eating it.

    查看是否煮熟。30分钟后,拿掉锅盖,看小龙虾是否煮好。最好尝一个看看。

  • If the texture is rubbery, the crawfish need more time to cook.

    如果肉质太韧,嚼不动,还需要再闷一会儿。

  • If they're on the verge of falling apart, remove the crawfish from the pot immediately, as they're in danger of overcooking.

    如果肉身即将分离,需要马上从锅中倒出小龙虾,因为就要煮过头了。

    Lid 盖子

    Rubbery 嚼不动的,橡胶似的

    Tender 肉质鲜嫩的,与rubbery相反

4. 怎么吃?

  • Find where the head and the tail meet and separate the tail from head.

    找到头尾相连处

    头:head

    尾:tail

  • Peal the tail’s shell and remove themeat.

    剥壳,取出虾肉

    虾壳:shell

    剥虾:peel it off

  • Suck out the juices of the head.

    吸汁:suck out the juice

  • Discard the shell in a separate plate while eating

    丢壳: discard the shell

  • Make sure to have plenty of napkins orpaper towels.

    餐巾/纸巾:napkin/paper towel
