China,withalargeterritoryandahugepopulation,hasprofoundtraditionalcultures,ofwhichthefoodcultureisparticularlyattractive.Chinesefoodcanbedividedintoeightregionalcuisines,namely:Guangdong,Shandong,Zhejiang,Fujian,HunanandAnhuiCuisine.Guangdong,locatedinthesouthernareaofChina,sotheCantonesefoodalsocalledtheLingnanCuisine,whichisdividedintoGuangzhouCuisine,ChaozhouandShantouCuisine,andHakkaCuisine.Theyhavetheirownfeatures,buttheyalsohavesomecommoncharacteristics,thatis,theyareoriginalinflavorandexquisiteindesign,aswellascharacterizedbyfreshnessandlightness.“EatinginGuangzhou”showsthegreatpopularityoftheGuangdongfood.However,sometraditionalsnacksaredyingoutfordifferentreasons.Therefore,itishightimethatwetookmeasurestoprotectthem,passingthemdowntoournextgenerations.

TraditionalCantonesefoodreflectsthesimplelifeandthecharacteroftheCantonese.UnlikethespicySichuanCuisine,GuangdongCuisinefocusesontheoriginalflavorthefood.Thefreshrawmaterialscontributetothefreshanddeliciousgourmet.Itischaracterizedbyclear,light,crisp,andfresh.TherearevariouskindsofgourmetsinGuangdong,includingsnacks,seafood,andotherstaplefoods.Forinstance,Chaoshanbeefball,Zhushengnoodles,sugaronionpancake,steamfish,salt-bakedchickenandsoon.Basiccookingstylesincluderoasting,stir-frying,deep-frying,braising,stewingandsteaming.Takesteamedfishforexample.Itissteamedoverhighheat,sothejuicesandflavorarereserved.Whentheskinofthefishburstsopen,itmeansitisfinished.Alltheseshowthatwearelongingforasimpleandnaturallife.Furthermore,wealsodemonstratethecharacterofdiligenceandcourageinobtainingsourcematerials.Considering,fish,thoughagiftfromthesea,cannotbegotteneasily.Fishmenshouldtaketheriskofstorms.Chancesarethattheywillworkinvain.Inspiteoftheseunpredictableevents,fishmenstillworkhardwithgreatcourage.Pickingseaweedisanotherkindofdangerousactivity.Sincetheygrowontheseareef,peopleshouldbecautiousabouttheseawaveswhenpickingthem,whichmeanstheyshouldbefastinaction.Apartfromthedifficultyanddangeringettingtheoriginalmaterials,patienceisanotherrequirementinthecomplicatedfoodprocessing,suchasmakingtheZhushengnoodles,whichisfamousforitselasticityanddelicacy.However,thatdoesn’tcomesoeasily.Tomakeit,craftsmanridesonbambootopressthepaste,whichtakesalongtimeandgreatefforts.

ThegreatvarietyofCantonesefood,snacks,cookies,soups,etc,enrichespeople’slivesandarousespeople’shomesickness.Newvarietiesareconstantlyadded.Chefs’innovationinmakingnewdishesenablespeopletoenjoydifferentfoodeveryday,whichenrichestheirlives.What’smore,theuniqueflavoranddelicatetasteoftheGuangdonggourmetremindspeople,whoworkfaraway,oftheirhometown.Anditisoneofthereasonsformanypeopletogohomenomatterhowbusytheyare.Itisalsoacomfortforthosewhocannotmakeitduringfestivals.

However,itisapitythatmanytraditionalCantonesedishesaredyingout.Therearemanyreasonsforthisphenomenon.Foronething,peoplelacktheawarenessofprotectingtraditionaldishes.Withtheappearanceofnewvarietiesoffoodandtheinfluenceofforeignfood,manyCantoneseareeagertotastenewspecialties.Asaresult,manydelicaciesarelosingtheirpopularityamongthepublic.Furthermore,someGuangdongsnacksarenolongersoldonthestreetasbefore.Instead,theyarenotsoldanymore,orsoldinotherplaceslikesupermarketsandfive-starrestaurants.Thisphenomenonshowsthedisappearanceoftheoriginalfoodculture.Foranother,manytraditionaltechniquesarenotpasseddowntoyounggenerations.Ononehand,sometechniquesaredifficulttolearnortheprocessistiring,somanyyoungpeoplearenotwillingtolearn.Ontheotherhand,thedescendentsofskilledcraftsmenarenotinterestedintheirfather’scareer.Theyareusuallywell-educated,sotheycanhavemorecomfortablejobswithmuchhigherpay.

Inconclusion,itissuggestedthatactionsmustbetakentoprotecttheuniqueCantonesegourmet.TheuniqueLingnanflavorrepresentsthetraditionalfoodcultureanditisimportantforeveryCantonese.People’sawarenessshouldberaised,especiallyyoungpeople’s,toprotectit.Newvarietiesornewcookingmethodscanbecreated,buttheoriginalflavorshouldbepreserved.Moreimportantly,traditionaltechniquesshouldbepasseddowntoyounggenerationsbyinspiringtheirinteresttolearnthosetechniques.Ifconditionpermits,wecanalsofollowtheexampleofNicolasXie,afamousHongKongstarwholed3,000HongKongpeopletobreaktheworldrecordofmakingeggettesintwoandahalfhours.Wecancallonmorepeopletosetworldrecordsforothertraditionalfood,thus,peoplewillattachmoreimportanceontheprotectionandinheritanceofthem.Ifweprotectourtraditionalfood,theywillbecomemuchmorepopularinChina,andevenintheworld.Passingthemdownfromgenerationtogenerationwillenableourdescendentstoenjoythedelicaciesandappreciatethecultureandthewisdomoftheirancestors.
