从昨天开始气温直线下降,没有阳光的日子,心情也变得阴沉起来~~~~不知为何,我突然很怀念冬天的雪地、暖炉和火锅~~~你看,人总是这样的,当时觉得很糟糕,而等到过去了,才发现其实那些东西也是很可爱的,可惜年华似水,有些事情可以重来,有些事情却只能缅怀,比如……苦瓜牛肉 <wbr> <wbr> <wbr>如何才能牛肉滑嫩、苦瓜不苦?

今天的这篇,是专门送给优谜童鞋的~~~众所周知,我是个狂热的肉食爱好者,但这种狂热仅限于一种肉苦瓜牛肉 <wbr> <wbr> <wbr>如何才能牛肉滑嫩、苦瓜不苦?,我们家很少吃牛肉,我觉得牛肉纤维粗不如猪肉香,但其实牛肉处理得好,是非常滑嫩的,今天就来试验下

 

 

苦瓜牛肉(苦瓜不苦,牛肉滑嫩都有小窍门)

 

原料:苦瓜、牛肉、鸡蛋、葱姜、盐、白酒、食用油、水淀粉、黄豆酱等

做法:

1、牛肉清洗干净后,切成肉片(横切牛羊竖切鸡,要把牛肉的纤维切断~~)

2、切好的牛肉放入清水中浸泡15分钟,水中加入一勺白酒

3、泡好的牛肉捞出沥干,加入适量盐和半勺油,抓拌均匀后腌制10分钟,然后加入水淀粉,给牛肉上浆,最后加入半个蛋清,抓拌均匀即可

4、苦瓜清洗干净后切片,锅里放水,水中加少许盐,水烧开后,将苦瓜下入焯一分钟,然后迅速放入凉水中浸泡,然后捞出沥干

5、炒锅里放两勺油,油热后,将牛肉下锅快速滑炒,牛肉一变色就加入切好的葱姜末,加入少许黄豆酱,翻炒均匀,然后将处理好的苦瓜放入一起翻炒,然后关火装盘即可

 

牛肉滑嫩的小窍门:

地球人都知道,不管猪牛肉,要香嫩就要事先腌制和上浆,给牛肉上浆的办法各家不同,但我试验后觉得这个比较好,非常嫩滑:

1、牛肉要先泡水,水分多了肉自然会嫩,还能去除剩余的血丝,然后再加入适量盐和油腌制,加入盐可以入味,油可以使牛肉滑嫩

2、上浆要用到水淀粉和蛋清,水淀粉要一点点地加,然后用手抓拌均匀,牛肉会很快吸收水淀粉,大约有2到3茶匙即可,最后再加入半个蛋清,加入蛋清的牛肉炒好后会发白,但是口感非常嫩滑

3、炒的时候,油要比平时炒菜多一些,中大火快速滑炒,牛肉完全变白后即可关火,加热过度,牛肉的质感就大打折扣

 

苦瓜不苦的小窍门:

苦瓜可是很好的东西,清凉败火,最适合爱给自己找麻烦的我,话说这两天口腔又溃疡了苦瓜牛肉 <wbr> <wbr> <wbr>如何才能牛肉滑嫩、苦瓜不苦?,但是这东西太苦了,所以要好好处理下

1、切苦瓜:我是用刀横着片苦瓜,将它的白芯略过,然后改刀成片,白芯最苦了

2、焯苦瓜:用开水汆烫苦瓜,可以去除部分苦味,水中加少许盐,可以使苦瓜的颜色翠绿,但要掌握时间,这样才能保持苦瓜脆嫩的口感

3、焯好的苦瓜要迅速过凉,口感清脆又不苦
