 桃仁鸡丁(考生必备的美味补脑菜)

 

原料:鸡脯肉、核桃、胡萝卜、青辣椒、盐、食用油、白酒、海鲜酱油、水淀粉

做法:

1、核桃砸开剥出肉,将核桃肉放清水里浸泡20分钟

2、鸡脯肉切成小丁,加入一小勺食用油,加入一勺盐和少许白酒,抓匀后腌制5分钟,然后用水淀粉上浆

3、胡萝卜和青椒切成小丁,泡好的核桃捞出来沥干水分

4、锅里放适量油,油热后将核桃放入,小火慢慢烤香,它然后铲出,将浆好的鸡丁放入锅里滑炒,直到鸡丁热色变白,肉质成熟即可铲出。

5、将胡萝卜丁和青椒丁下锅煸炒,放入鸡丁一起翻炒,然后加入烤香的桃仁翻炒几下,最后滴入适量的海鲜酱油翻炒均匀,即可出锅

 

小窍门:

1、核桃仁放入清水中浸泡,你会发现水的颜色变成棕黄,核桃仁形态变得更饱满,口感也不那么苦涩

2、鸡丁要事先腌制才入味,加入一勺油和上浆的作用都是为了让鸡丁更滑嫩,少许白酒可以去腥提鲜

3、核桃仁放入锅中小火两面烤香后,桃仁香还脆,口感更好

4、滑炒的时间不要太长,鸡丁完全成熟但还保持滑嫩的口感,

5、加入胡萝卜和少许青辣椒,是为了让菜的颜色和营养都丰富起来,菜的口感也富于层次化

  蛋类:如鹌鹑蛋、鸡蛋。鸡蛋含有丰富的蛋白质、卵磷脂、维生素和钙、磷、铁等,是大脑新陈代谢不可缺少的物质。另外,鸡蛋所含有较多的乙酰胆碱是大脑完成记忆所必需的。因此,每天吃一两个鸡蛋,对强身健脑大有好处。

  鱼类可为大脑提供丰富的蛋白质,不饮和脂及酸和钙、磷、维生素B1、维生素B2等,它们均是构成脑细胞及提高其活力的重要物质。

  大豆和豆制品含有约40%的优质蛋白质,可与鸡蛋、牛奶媲美。同时,它们还含有较多的卵磷脂、钙、铁、维生素B1、维生素B2等,是理想的健脑食品。

  小米含有较丰富的蛋白质、脂肪、钙、铁、维生素B1等营养万分,有“健脑主食”之称。小米还有能防治神经衰弱的功效。
