 本来今天的心情格外好,我不说你也懂的,只是希望以后这天气能正常一点,别总让俺们在冬天和夏天之间穿梭,忒不厚道油饼(面鱼)、大麻花 <wbr> <wbr> <wbr> <wbr> <wbr>胶东经典面食

    面鱼(龙口的孩子看过来,我答应多少人的,我记不住了,迟到的作业)

 

 

原料:面粉500克、温水400克、酵母粉6克、无铝泡打3克、糖25克、盐5克(我用了双份)

做法

1、面粉里加入糖、盐、泡打搅拌均匀,温水溶解酵母,静置3分钟后,分多次将酵母水倒入面粉里搅拌均匀,调成很稀的面团

2、调好的面团放室温放置4小时以上醒发,面团发好后拿出备用

3、在手上和面板上抹油,揪一块面团用手摊平,用刀子割两道口子,起油锅加热

4、锅中油烧热到七成,将面饼抻长了放入油锅,一面上色后翻面,直到金黄酥脆后即可捞出沥油

 

小贴士

1、酵母水要分多次加入面粉里,活好的面团比较稀,属于用手抓很费劲的那种,可以用擀面杖搅拌和面

2、面团要在温暖处放置4小时以上,发酵好了后才能拿出用

3、为了便于操作,手上和面板上都要抹油,或者找个大铁盘也行

4、油要热,下锅的油饼才会瞬间蓬松涨大
