Many kinds of bottled teriyaki sauce are sold at grocery stores, but basic sauce is easy to make at home with a few ingredients. The key ingredient is mirin which adds luster to ingredients when cooking with the sauce.

Ingredients:

  • 1/2 cup soy sauce
  • 1/2 cup mirin
  • 2 Tbsp sugar

Preparation:

Combine all ingredients in a saucepan. Stir the mixture well. Put it on medium heat and bring to a boil. Turn down the heat to low and simmer for a couple minutes. Stop the heat and cool the mixture.

*If you don't have mirin, you can substitute sake and sugar for mirin. The ratio of sake to sugar is 3 to 1. Adjust the amount of sugar, depending on your preference.

Whether it's chicken or beef, teriyaki is probably the most popular Japanese recipe in America. Teriyaki comes from the words "teri" which means "shiny" and "yaki" which means grilled. Beef teriyaki is an easy recipe with only a couple ingredients.

This beef teriyaki recipe uses top sirloin steak, but you can use the same sauce with other cuts of beef, as well as chicken and pork.

Makes 4 Portions Beef Teriyaki

Prep Time: 1 hour, 10 minutes

Cook Time: 10 minutes

Total Time: 1 hour, 20 minutes

Ingredients:

  • 2 oz piece fresh ginger root
  • 1/2 cup soy sauce
  • 1/2 cup sake
  • 1/4 cup mirin
  • 2 tbsp brown sugar
  • 4 (8-oz) lean top sirloin steaks, trimmed
  • 1 tsp cornstarch
  • 2 tsp cold water
  • 1/2 tsp sesame seeds
  • 1 green onion, chopped

Preparation:

For the teriyaki marinade: Grate the ginger with a cheese grater. Collect the ginger in your hand and squeeze the juice into a small bowl - you'll get about a tablespoon. Discard the pulp. Add the soy sauce, sake, mirin, and brown sugar to the bowl; whisk until the sugar is dissolved.

Place the steaks in a sealable plastic bag and pour in 1/2 cup of the marinade. Squeeze out the air and refrigerate for 1 hour. In the meantime, pour the rest of the marinade into a small saucepan and bring to a boil over medium heat. Mix the cornstarch and water together in a small cup, and then drizzle into the boiling marinade, whisking as you pour.

The cornstarch will lightly thicken the mixture. As soon as it returns to a boil, turn off the heat and reserve. Note: this style of teriyaki sauce is not supposed to be overly thick.

Remove the steaks from the teriyaki marinade and pat dry with a paper towel. Sear the beef in a preheated sauté pan, over medium-high heat, in a little vegetable oil, until it reaches your desired doneness. About 3-4 minutes per side for med-rare. When the steaks are about 1 minute away from being done, pour about 1/4 cup of the teriyaki sauce into the hot pan, and turn the steaks to coat. The teriyaki sauce will thicken quickly and create a shiny glaze on steaks as soon as it hits the hot pan.

Remove the beef from the pan and let rest for 5 minutes before slicing into thin strips. Divide the teriyaki beef onto 4 warm plates, and drizzle over the remaining teriyaki sauce. Garnish with the sesame seeds and green onion.

A great steak doesn't need any help. A not so great steak does. If you are grilling a steak that isn't the most tender then this classic steak marinade is perfect.

Yield: Makes about 3/4 cup

Ingredients:

  • 1/4 cup cooking oil (see note below)
  • 1/4 cup red wine vinegar
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Preparation:

Combine all ingredients and mix well. See Marinating Beef to get the right time for your steak.

Note: You need an oil with a high Smoke Point so choose a refined oil, extra light olive oil, or avocado oil.

I used this marinade to add some flavor to a batch of NY Strip steaks I was cooking for my staff. The steaks looked good so I only left them in the marinade for about 30 minutes - they cooked up great over a gas grill and remained moist through all levels of serving from Medium Rare to Well Done. I'll definitely mix this up again....

A potent steak marinade, aptly named Docs Volatile Steak Marinade.

Ingredients:

  • 4 oz Jack Daniels Whiskey
  • 3 TB Honey
  • 3 Tb Worcestershire Sauce
  • 1 tsp White pepper
  • 1 TB Tabasco sauce
  • 2 Garlic cloves minced
  • 1 TB cinnamon ground
  • 12 oz Guiness Stout
  • 4 oz Peanut oil
  • 3 tsp salt
  • 2 oz Soy sauce

Preparation:

Start with a saucepan. Mix the Guiness Stout, the Jack Daniels & the oil. Add the Worcestershire & tabasco sauce. Bring to a slow boil & add the white pepper, garlic, salt, cinnamon, & honey. Mix well, turn off heat, and allow to cool to room temp. Use immediately or store in a glass jar in refrigerator for up to 1 week.

I made this marinade and used is on boneless chicken thighs and thin sliced sirloin steaks. Everyone loved it! I soaked both the chicken and steak all day and we ate it without any other seasoning. And the leftovers were even better the next day and even a few days later! My husband was quite impressed since I don't ususally do the grill
