Cashew Ricotta:

I give you a recipe of Cashew Ricotta:
Ingredients:
1/2 Cup raw cashew pieces.
1/4 Cup fresh lemon juice.
2 Tbsps olive oil.
2 Cloves fresh or roasted garlic.
1 Lbs firm tofu, drained + crumbled.
1 1/2 Tsps dried basil.
1 1/2 Tsps salt.
Directions:
Use food processor: blend together the cashew, lemon juice,olive oil and garlic until a thick creamy
paste forms. Add the crumbed tofu in and working in 2 or more batches, if necessary, until the
mixture is thick and well blended. Add the basil and salt.
