纪录片《餐叉胜于手术刀》掀起了一场运动

   拍摄《餐叉胜于手术刀》已经八年了,回头看从那时起世界有了多少难以置信的变化。2008年我已经是一位素食主义者,大约有7年主要吃完整食物的饮食,并长期对健康和营养有兴趣。通过个人经验和研究,我知道如何改变这种饮食方式。

   电影和配套书超出了我的想象,有这么多人被激励改变他们的饮食,那些寻求支持的人拯救了他们的生命。所以电影发行5年来,我们努力帮助那些走上基于植物旅途的人们。我们团队很高兴又做了三本书、一个移动应用程序、一个在线烹饪学校,一个膳食规划服务、一个网站,这是现在最流行的健康目的地之一。
  人们已经准备好了这种自己掌握命运的生活方式,我相信潮流正在向好的方面转变。以植物为基础的饮食已经成为一种迅速增长的趋势,甚至肉类公司也在上船。现在这是一个大众话题,即使是最主流的健康出版物。曾经被认为是一种激进的饮食方式,正在被理解为健康的、正常的饮食方式。

Reflecting on Forks Over Knives,the Film That Became a Movement

It hasbeen nearly eight years since I embarked on making Forks OverKnives, and it’s incredible to look back and see how much haschanged in the world since then. In 2008, I had already been eatinga vegan, predominantly whole-food diet for about seven years andhad been interested in health and nutrition for a long time. I knewthrough personal experience and research how transformative thisway of eating was.

It wasafter I read The China Study and some other books that I came torealize the extent of the evidence. Heart disease, the country’sleading cause of death, and other chronic diseases can typically berendered harmless by a diet of whole-plant foods. I thought tomyself: Isn’t this worth a front-page story in The New York Timesor Newsweek? Millions of people are suffering from heart diseaseand type 2 diabetes, and no one is giving them the life-savinginformation they need.

I was apartner in a commercial real estate firm at the time and had nobackground in film. But I was convinced that a film was the mosteffective way to bring the message to a broad audience. So inOctober 2008, I took a leap, a giant leap, and decided to make thedocumentary. I also decided to fund this project by myself on alimited budget, despite receiving several investment offers. Irecruited an award-winning production team and spent the next twoyears working on the film that would become Forks OverKnives.

Making the film was the most fulfilling experience of my life.My goal was to make the film persuasive and relatable, which is whywe took the time to allow the audience to really get to know ourlead subjects, Dr. T. Colin Campbell and Dr. Caldwell Esselstyn. Wespent little time focusing on the negatives and instead made thefilm about empowerment. We have more control over our healthoutcomes than we ever realized, and that’s a good thing!
The reception to the film was astounding. We did about 30advance screenings beginning in the summer of 2010, all but one ofwhich were sold out and often there were lines around the theaters.News about the film spread quickly, mainly by social media. In May2011, the film was in theaters across the country; in September ofthe same year, the film was released on DVD, on Netflix, and otherdigital platforms. Meanwhile, the companion book that arrived thatsummer became a No. 1 New York Times bestseller. It was clear thata large number people were ready for the message and were gratefulto have more control over their health.
I didn’t think of anything beyond the film and companion book,but there were so many people who were inspired to change theirdiets and take back their lives that were looking for support. Sowe’ve stayed around and spent the last five years since the film’srelease endeavoring to help people on their plant-based journeys.Our team has enjoyed doing just that with three more books, amobile app, an online cooking school, a meal planning service, anda website that is one of the most popular health destinationstoday.
People are ready for this self-empowering lifestyle, and Ibelieve the tide is turning favorably. Plant-based eating hasbecome such a rapidly growing trend that even meat companies arecoming on board, and it’s now a common topic of conversation amongeven the most mainstream health publications. What was once seen asa radical way of eating is coming to be understood as healthy andcommonplace.
I feel honored to be part of this plant-based movement and amthankful to see more and more people enjoying the lifestyle everyyear. The growing number of professionals such as doctors,nutritionists, researchers, chefs, and bloggers who support thewhole-food, plant-based lifestyle gives me hope that someday wewill live in a world where heart disease and type 2 diabetes willbe nothing more than a very rare occurrence.
