除了果肉非常高的营养价值外,
毫不起眼的橙皮其实也有很多妙用。

Oranges are one of the most common fruits in people, 
but very few people use or eat orange peels, 
knowing that they are very nutritious and useful.

-橙子皮的好处-

Benefits of orange peel

橙子皮对身体健康有很多好处

(橙子皮分为橙黄色的外皮和里面的白色部分。)

Orange peel has many benefits for body health.
(The outer part of the Orange peel is called zest, the white part between the rind and juicy centre is called pith).

橙皮含有大量纤维和类黄酮,维生素A、C、B5和B6,以及钙、核黄素、硫胺素、烟酸和叶酸

Orange peel is high in fibre and flavonoids as well as vitamins A, C, B5 and B6, plus calcium, riboflavin, thiamin, niacin and folate.

橙皮中某些营养物质的含量高于水果本身,例如,100克橙皮含有136毫克维生素C,而通常食用的果肉只含有71毫克。

Orange peels contain certain nutrients at higher rates than the fruit itself, for example 100 grams of orange peels 136 mg of vitamin C, while orange fruit, which is usually eaten 71mg.

-橙子皮干/橙子皮粉的做法:-

The orange peel can be dried at home in easy and simple steps, following the following steps:

1. 注意选择的橙子是不打蜡的橙子,最好是生态或有机种植的!!

1. Select good quality wax-free oranges, preferably organic!!

2. 将橙子清洗干净,用棉布拍干。

2. Thoroughly wash the oranges, and pat dry with a cotton cloth.

3.  用一把锋利的刀或蔬菜削皮刀,去皮。尽量避免切到皮的白色部分(白色部分可以分开削皮,另使用*,见下文)。

3. Using a sharp knife or vegetable peeler, peel them. Try to avoid cutting into the white part of the skin (keep the white part called pith for using separately* see bellow).

4. 将皮切成薄片,以便它们能更快地干燥。

4. Chop up the peels into thin slices so that they can dry faster.

5. 用蔬果烘干机、烤箱或者在冬天也可以放在暖气上。

5. You can use a food dryer dehydrator,bake on low temperature in the oven or place next to a heater in winter.

6. 彻底晒干后,加入搅拌机的磨粉杯打成细粉。

6. After they are fully dried add them to a high powered blender or food processor and grind them until they are a fine powder.

7. 将橙皮粉放在一个密封的玻璃钢保存(可保存至6个月)。

7. Add the orange peel powder to an airtight container and store in a cool dry spot for up to six months.

-用干橙皮的方式

Using Dried Orange Peels


1. 泡茶:
橙皮干可以单独冲热水泡茶,也可以与其它茶类一起泡茶,就类似陈皮一样。
 
1. Add dried orange peels to tea.
Put a strip or two of dried orange peel into a cup of your favourite freshly-steeped tea. The orange flavour is especially delicious with green or black tea.

2. 用于烹饪:
橙皮粉可以加到自制的沙拉酱里,洒在蔬菜上然后烤,放在粥或饭里,或加入烘烤配方中使用,等等……。
 
2. Use for cooking:
in homemade salad dressing, drizzle it over veggies and roast them, use in porridges or rice, or use it in your favourite baking recipe etc.

3. 做橙皮盐:
用磨碎的橙皮和草药给盐调味。在装满你最喜欢的盐的罐子中加入磨碎的橙皮和干百里香或迷迭香。将所有成分充分混合,并在做饭时使用。
 
3. Flavor salt with ground orange peels and herbs. 
Add ground orange peels and dried thyme or rosemary to a jar full of your favourite salt. Mix all the ingredients thoroughly and use the flavoured salt to add an extra dimension to your next meal. It is also a wonderful homemade gift idea.

4. 自制空气香薰:
在密闭容器中装入干橙皮、香料、干花、精油等。静置3天,然后打开罐子,放在房间用来香熏。
 
4. Use orange peels to replenish the air:
Fill an airtight container with dried orange peels, cinnamon sticks, nutmeg, dried flowers, and a few drops of an essential oil like clove, orange, or cinnamon. Let it sit for 3 days, shaking the container a few times each day, to allow the aroma to strengthen. Then, place the potpourri in a pretty vase or bowl and set it out in your home.

5. 自制护肤品:
橙子皮粉,有益于治疗、保护和美化皮肤。可以用来自制面膜或护肤品,比如可以放在溶化的椰子油搅拌,然后等冷却后使用与皮肤上。
 
5. For the skin,
Orange peel powder naturally has many properties that will heal, protect and maintain beautiful facial skin. Orange peels are very useful for the skin as they are used to remove blackheads and facial pills, and are used to treat dark circles and close pores, making the skin look fresher and brighter, as well as being useful in dry skin.
You can mix with coconut oil or make peelings as you wish.

6. 驱蚊:
此外,橙子皮是驱蚊的有好方法。
 
6. As a Mosquito Repellent:
orange peels are an effective way to flush mosquitoes out of the house.

7.清洁头皮、护发:
将橙皮粉与少许水搅拌均匀,然后涂在头皮上,等几个小时后用温水清洗。如同用了高质量的护发剂,头发会光滑柔软。
 
7. Hair mask:
Mix orange peel powder with some water. Apply the paste on your scalp and let it sit for a couple of hours and then wash off with warm water.

  About the orange pith

 
大多数人吃橙子时会将橙子皮的白色部分扔掉,因为认为它是苦的或以为是不能吃的。
 
虽然它的味道不如深色的果皮外层香也没有水果内的甜,但实际上橙子白色部分也有很多好处。
 
The pith of oranges and other citrus fruits is the stringy, spongy white stuff between the peel (or zest) and the fruit. 
 
Most people strip it away before eating oranges, because they think it is bitter or inedible. 
 
Although not as strong in flavour as the dark-coloured rind or the inner part of the fruit, but actually, the pith has a lot benefits too:

富含膳食纤维:
橙子里面白色的皮中,含有丰富的膳食纤维,适量摄入这种物质可以促进胃肠蠕动,促进胃肠的消化吸收

Pith is rich in fibre:
When it’s completely removed, the fibre web content of orange is reduced by 30 percent. As well as pectin, a sort of fibre is only located in the pith. The advantages of pectin consist of relief from diarrhea and also helping in healthy and balanced cholesterol.

富含维生素C:
其实,橙子皮白色部分所含的维生素C与果肉所含的维生素C数量是相同的。如果将白色部分与果肉一起吃会增加你的维生素C摄入量。
 
Source of Vitamin C:

-食用法-

Eating the orange pith


可以直接与果肉一起食用。第一次吃时可能会有轻微的苦味,不过其实味道与金橘相似,习惯了会发现味道其实挺不错。

The best way to consume it is along with the fruit. Remove the peel delicately so a large proportion of the pith stays on the fruit. It may taste slightly bitter in the first go, but it will add a new flavour to the tangy, sweet orange.

不敢直接吃也可以晒干/烘干,然后在料理机的磨粉杯磨成粉,可以作为天然的维生素C保健品用,提高免疫系统。

也添加到橙子味的烘焙或自制果酱中,以增强味道和营养价值,就像使用果皮的外层一样(不过外层的味道会更浓更香一些)。

You can also collect the pith and dry them separately from the zest ,then churn it in the grinder to make powder which you can use as a natural healthy Vitamin C powder to boost your immune-system;
or to add in orange based desserts or marmalades for enhanced flavour and nutritive value just similar as you would use the zest (the zest has a more stronger flavour though).
