 哎,不知不觉假期只剩三天了椿香豆腐丸子 <wbr> <wbr> <wbr> <wbr>香椿季绝不能错过的好味道,又要过那种半个月没有休息的日子啦~~~俺家太后最近很是不顺,肩周炎发作滴厉害,已经把那只胳膊吊着了,但吊着胳膊仍然留连于联众麻将实在让俺们难理解,人家回答:“饭,我是肯定不能做滴,因为一只手不能做,麻将可以一只手打~~(西不改个风~~~椿香豆腐丸子 <wbr> <wbr> <wbr> <wbr>香椿季绝不能错过的好味道

 椿香豆腐丸子 (豆腐丸子不碎不散)

 

原料:香椿、肉馅、豆腐、葱姜、油、盐、生抽、醋、胡椒粉等

做法

1、香椿清洗干净去掉硬杆,然后用滚热的开水汆烫一下,捞出后冲洗干净沥干水分,剁成细末,

2、葱姜切碎备用,猪肉馅里加入少许生抽调味,加入2勺花生油,一小勺麻油,顺一个方向搅打上劲

3、豆腐清洗干净后,用手捏碎碾细,和肉馅拌匀,肉馅和豆腐大约在1:1,加入少许盐,加入切碎的葱姜末,加入剁碎的香椿末,加入少许盐调味,然后顺一个方向搅拌均匀

4、拌好馅料后,取一小团放掌中团圆,将做好的丸子放入一盘中备用,

5、锅中烧水,水热未沸腾时,即将丸子放入锅中,转小火慢慢加热,等丸子浮出水面,即可关火,水中加入少许盐、醋和胡椒粉调味

 

小贴士:

1、我们家的香椿是前一天刚从树上摘下来的,如果当时做的话,就不必汆烫了,因为硝酸盐含量低,但是保存一两天后就必须要焯水或是汆烫,因为香椿在保存过程中,硝酸盐能转换成亚硝酸盐,对人体还是有一定害处的,所以在吃之前要先用开水汆烫。

2、做丸子之前一定要先腌制肉馅,这样做好的丸子才入味儿,搅拌的时候一定要顺一个方向才能上劲

3、香椿和豆腐是绝配,所以我在这个丸子里加入了不少的豆腐,加入豆腐后出现了一个问题,那就是丸子容易散,解决方法(任选其一):

1)、豆腐的比例,豆腐的量一定不能超过肉,要比肉略少一些

(2)、可以加入少许鸡蛋,蛋液有粘合凝固的作用,丸子下锅不容易散

(3)、丸子下锅时,不能用滚水,火也不能太大,否则豆腐丸子一下就散了

 

4、丸子要事先做好一起入锅,这样可以保证每个丸子都均匀成熟,可以根据自己口味加入各种调味料
