My sister, she’s a bit of a party animal. In that super hard working, college student kind of way. She can throw a really good theme party. When I was her age, I threw dinner parties. She’s young at heart. I’m in her words, an old soul. She’s always the life of the party. I’m well, not. She likes to mix up crazy cocktails. I like to bake. But, we both love a good summer cocktail. And this is one of our favourites. College party, or dinner party, it doesn’t matter. Your guests will love it. Make lots. The great thing about it is it can be a virgin cocktail, or a spiked one. Vodka, tequila, or nothing. You choose. Either way, it’s great. I’ll let you guess which one we prefer. Blueberry-Limeade Cocktail 1 dry pint blueberries, divided Instructions: 1. Reserve about 1/2 cup blueberries, and place the remaining blueberries in a medium saucepan. Using a potato masher, or a fork, mash the blueberries. Add in the sugar and water, and bring to a boil over medium-high heat. Once mixture is boiling, reduce to a simmer, and allow to simmer for 5 to 10 minutes, until the mixture becomes a deep purple colour. Strain mixture into a container with a lid, and discard the blueberry pulp. Cover and refrigerate until cold. 2. Before serving, juice the limes and mix with the blueberry simple syrup in a pitcher, add the liquor if using, the reserved blueberries, and some sliced limes. Mix well. Alternatively, if you would like, you can put the liquor in the individual glasses to keep the limeade non alcoholic. Serve over ice. Jessica’s Notes:
