With the coffee renaissance that is currently taking place across the world, it's not surprising that more and more people are beginning to care more about coffee's taste than its convenience. Therefore, people now care about beans to use, the ways beans are roasted and the ways coffee is brewed.

随着咖啡在全世界范围内再度风行,看到越来越多的人开始在乎咖啡的口味而不仅仅是其便利性也就不足为奇了。也因为如此,人们开始懂得选择不同的咖啡豆,不同的烘焙方式,会选择咖啡不同的冲煮方式了。



Speaking of brewing methods, everyone knows that manual drip coffee coffee is the most popular. The method is not only capable of presenting the richness of the flavors of all types of beans, it also allows people to watch and appreciate the art of manual drip coffeee. 

说起冲煮方式,目前大家知道最流行的就是手冲了。这个方法既能不仅可以充分体现各种豆子的丰富口感,而且也让人们观赏到手工冲煮的艺术。


Lately, however, many frontier boutique coffee houses are switching to auto drip coffee drippers, such as Handsome, G&B, and Heart which are just some of the coffee shops that have chosen to exclusively serve automated brew methods. You also see this in some other coffee shops serving both manual drip and auto drip such as Blue Bottle, INTELLIGENTSIA, etc.

但是最近很多非常前沿的精品咖啡馆又开始掀起来自动滴滤咖啡的浪潮了,比如 Handsome,G&B 和 Heart,这都是选择只做机器冲煮咖啡的咖啡馆。还有一些咖啡馆,你会看到手冲咖啡和滴滤机两种咖啡都有,比如 Blue Bottle, INTELLIGENTSIA 等。



Why? What is an auto drip coffee dripper? Is it the cheap coffee brewing machine we used to have at home?

为什么呢?自动滴滤机又是什么?难道是我们过去买的那种廉价的在家里煮咖啡的机器?


The truth is, the working mechanisms of manual drip and of the auto drip coffee maker are the same— pouring water slowly and at a constant volume through the ground coffee, and there’s no extra pressure involved. Of course, manual drip requires a person while an auto drip coffee is a machine. A good barista can pour water in a very controlled and stable manner and can adjust the water temperature, speed and flow as demanded by a particular type of beans.

其实,手冲咖啡和滴滤机的原理是一样的,都是慢速均匀地在没有高压的情况下利用水的重力冲煮萃取咖啡。只不过一个是手工,一个是机器。好的咖啡师能够非常平稳均匀地冲倒水流而且还可以根据冲煮要求调节水温,速度,水流等等,


 A pro auto drip coffee can do the same (we aren’t talking about the cheap ones but the high-tech ones which can be as expensive as espresso machines). So if both do the same thing, which one does it better? Let’s hear from some top-notch pro baristas :

而非常专业的滴滤机也是一样(当然这里说的不是那种家用等廉价的滴滤机, 而是现代专业的高科技滴滤机,好的滴滤机价格跟意式咖啡机价格不相上下),可以设定温度,水量,速度。那区别在哪里,哪个更好呢?来听听顶级的专业咖啡师们怎么说:

I don’t think I can answer the questions in such a binary way.  They both have their advantages and disadvantages and I would recommend both to people in different situations.  I think you can charge more for handcrafted coffee but it objectively takes longer and you have to staff someone good just to brew if you’re going to do it right.

我认为这个问题并没有一个泾渭分明的答案。两者都各有优劣势,因此在不同情况下我可能会推荐不同的方法。我想手冲咖啡定价可以更高,但客观上来说手冲咖啡耗时更久,而且如果你真的想冲出好喝的咖啡那对咖啡师的要求也很高。


Automated brew methods are more consistent, taste just as good when dialed in properly, and enable you to staff around it, making each cup worth more even if you’re not charging as much.  However, you have to work harder in other ways to make your brand seem conscientious to people who are only looking at it for 30 seconds at a time.

机器冲的咖啡品质更稳定,味道一样好,只要操作正确的话,而且因此你不需要花很多钱请咖啡师,这样就算你每一杯咖啡的价格定不了很高,利润可能还是更高。不过你确实需要在其他方面努力让你的店看起来更专业逼格更高。


At Intelligentsia, we brew coffee exclusively by hand at our busiest stores and staff someone all day to do only that.  Could an automated brewer make coffee that tastes just as good and require less labor?  Probably. 

在 Intelligentsia,我们即使在人流最多的分店也坚持只做手冲咖啡,而且我们请的咖啡师一天只需要负责做这件事。一台咖啡机能不能冲出同样好喝的咖啡而且降低人工成本呢?也许能。


 But brewing manually is just one way among many that we show our customers that they’re getting the best cup of coffee they could pay for and it pays off in brand equity.  However, if you don’t have good staff to pull it off, brewing manually will result in long wait times, poorly brewed coffee, stressed, unpleasant staff and ultimately frustrated customers.

但坚持手冲是因为我们希望顾客知道他们喝到的是最物有所值的好咖啡,这对我们的品牌来说是值得的。不过如果你没有办法请到好的咖啡师但还是做手冲的话,可能会导致很长的等待时间、咖啡也不好喝、其他员工感到更大压力,最终顾客也不会高兴。


So, there’s my answer.  Both, I guess.

  • It depends what the goal is. Manual brew allows the barista to not only control each cup but maybe more importantly allows the barista to engage with the customer.  This is important in our market for our business because it offers the customer a different perspective.  An engaged customer is necessary for future growth.

  • 这取决于目标是什么。手冲咖啡使咖啡师不仅可以把控每一杯咖啡的品质,而且更重要的可能是使咖啡师能够和顾客交流。这一点对于我们这一行是很重要的,因为它会给顾客一种不同的视角和体验。留住顾客对于生意的发展是必要的。


  •   I don’t believe the alternative is necessarily inferior. Great coffee can still be made from autodrip machines but how does that help the profession of the barista?  My goal is to build our brand around the talent of the barista.  That talent involves making great coffee and giving exceptional customer experience.

  • If I replace the barista with automatic machines I believe it waters down the profession of the barista and the interaction with the customer. That is for my brand in my market, and I certainly do not speak for everyone else, just myself and my company!

  • 如果我用机器代替咖啡师,那就会淡化咖啡师的专业度以及与顾客的交流。对我自己的品牌我是这么想的,但我当然不能代表所有人!
