比利时超市里的奶酪欣赏

Belgian supermarket cheese appreciation

编者按:比利时发源地奶酪很少,有一种却非常出名,例如林堡,但是林堡却被很多人认为是德国人发明的,被誉为“最臭的德国奶酪”。比利时还有一种非常著名的奶酪叫赫尔夫奶酪Fromage de Herve),因为赫尔夫地区先天的地理优势,独特发酵工艺,赋予了赫尔夫奶酪独一无二的风味,让其跻身欧洲顶级奶酪之列。

在比利时的超市里,大多数的奶酪还是来自于法国、德国、意大利等国家。

赫尔夫是比利时的一个地区,赫尔夫Herve 干酪就产于这里。这里干酪制作历史悠久,干酪师技艺精湛。Herve 干酪起源于13世纪,并且在1996年获得了欧盟颁发的 PDO 标志,即 Protected Designation of Origin 的英文缩写(法语中为AOP,即 Appellation d'Origine Protégée 的法文缩写),就是“指定原产地保护”标志。只有在Herve地区,由专业的干酪师,用传统工艺和传统原料生产的 Herve 干酪才能够使用 PDO 标志。因此,这个标志就成了顶级品质的保证。

Herve is a region in Belgium where the Herve cheese is produced. There is a long history of cheese making here, and the cheesemakers are skilled. Herve cheese originated in the 13th century and was awarded the European Union's PDO Designation in 1996, which stands for Protected Designation of Origin (AOP in French). Appellation d'Origine Protegee), the French acronym for designated protection of origin. Only in the Herve region can Herve cheeses produced by professional cheesemakers using traditional techniques and traditional raw materials bear the PDO mark. Therefore, the logo becomes a guarantee of top quality.
