啊哈哈,我滋儿啊,一个悠长的假期又将开始了。。。。不过,可以想象一定也过得很劳累京酱鸭肉 <wbr> <wbr> <wbr>附鸭饼的做法京酱鸭肉 <wbr> <wbr> <wbr>附鸭饼的做法(矛盾啊,矛盾)。。。。。

那天在逛超市时,发现有卖鸭腿的,还不错的样子,就买了两个,当时太后就很怀疑,毕竟俺们这个地方不时兴吃鸭子,这鸭腿怎么做才好吃呢,不怕,记得前段时间看电视学来的一招不错,用酱炒~~~

京酱鸭腿肉  (附鸭饼的做法)

 

做法:鸭腿清洗一下,去骨头,然后将鸭腿肉片成薄片,刀工和我一样不咋地的同学可以切丝、切块(*^__^*)

葱姜切丝和鸭腿肉一起放入一容器内,倒入料酒腌制一个小时

 

这时候你可以准备和面做鸭饼了:说是鸭饼其实有点故弄玄虚了,其实就是春饼的做法京酱鸭肉 <wbr> <wbr> <wbr>附鸭饼的做法

 

原料面粉150克,开水60克,凉水20克,盐1克

做法:面粉加入一克盐,倒入60克开水烫面,待面不那么烫手时,一点点加入剩下的凉水,和成面团,醒制20分钟

 

面团分成二十个均匀的剂子,洒些面粉,按成圆形,每个上面均匀地刷一层油,叠在一起,10个剂子一叠,擀成圆饼,蒸锅上屉,待水开后,将擀好的饼入锅蒸,大火7-8分钟,两次将所有的饼蒸熟

 

出锅后,趁热将饼一张张撕开,因为里面刷了油,不会互相粘连,而且饼很薄,能透亮

 

咱们自己擀的饼没有外面卖的那么圆,若是要追求完美,可以拿一个碗或是小盘子扣在上面,将边缘不规则的用刀剔除就可以了

接着做菜:腌制了一个小时的鸭肉,可以去除鸭肉本身那股难闻的腥气

 

锅里放油,油热后,放鸭肉进去煸炒,鸭肉发白,立刻铲出来,因为鸭肉一旦炒过火,肉质变老就发硬,咬不动

锅里放油,放入三大勺甜面酱进去炒香,加入一点糖,一点蚝油提鲜,将事先炒好的鸭肉放进去翻几下,最后加入香油和鸡精,出锅
