话说,为了今天的这篇可是相当不容易,俺和太后整整忙活了一上午胶东传统豆饽饽 <wbr> <wbr>爹妈最爱的30道怀旧美食~~~为的就是还原太后和老爹小时候最爱吃的豆饽饽,龙口的孩纸们都过来,过节发福利了。要知道这豆饽饽以往可是只有过年、过节和给人家新家安锅的时候才做的,稀罕东西呢~~~

舌尖上的儿童节:50后爹妈最爱的30道怀旧美食胶东传统豆饽饽 <wbr> <wbr>爹妈最爱的30道怀旧美食

 

主要操作者:太后

发面、煮豆、磨豆、学习:我胶东传统豆饽饽 <wbr> <wbr>爹妈最爱的30道怀旧美食

 

原料:姜豆、地瓜、糖、面粉、酵母、碱面等

做法

1、姜豆洗净,清水中泡发1夜,冲洗掉泡沫,入高压锅煮红豆,地瓜洗净去皮,同时放入锅中蒸

2、230克温水溶解3克酵母,静置3分钟后,分多次倒入500克面粉中,揉成光滑的面团,温暖处发酵

3、红豆煮好后,关火焖20分钟开锅,将豆子沥干水分放入一盆中,趁热用勺子碾碎,然后加入适量白糖和地瓜,一起碾碎,然后分成大小均匀的豆馅团

4、发酵好的面团拿出,加入碱面揉匀,分成大小均匀的剂子,擀成圆形面皮,包入豆馅,然后封口团圆,垫玉米皮,盖湿布发酵半小时

5、冷水上锅,大火蒸20分钟即可关火,5分钟后掀锅

 

小贴士:

1、传统的胶东豆饽饽里面放的不是红小豆,而是姜豆,姜豆是本地土叫法,学名叫啥不知道,可能有些地方叫花芸豆吧

2、煮好的豆子要趁热碾碎,只能用勺子碾碎不能放入搅拌机里,因为豆馅必须带一些颗粒才好吃,如果全部打碎就失去了独特的风味,地瓜的量也要适当,大约和豆子在1:4的比例即可,加入地瓜可增加豆馅的粘性和甜度,这也是传统豆饽饽的特色。

3、豆馅要提前分成大小均匀的团状,这样包的时候更容易操作,做出的豆饽饽大小也均匀、美观

4、做好的豆饽饽要发酵半小时再上锅蒸,因为馅料和面皮的比例比1:1还要多,这么多的馅料如果不发酵的话,很容易蒸成死疙瘩,此方法适用于一切包馅面食

5、旺火蒸,关火后焖5分钟再开锅,这样,好吃又喧软的豆饽饽就做好了
