Chinese hot pot consists of a simmering metal pot filled with broth that's placed at the center of a table, and raw slices of meat and platters of vegetables piled high around it. 


饭桌中心放上一口锅,锅里煮上热腾腾的汤底,再加上一碟碟生肉片和新鲜蔬菜,这就是中国的火锅。


As the ingredients are cooked in the boiling pot, each guest takes a turn to look for their favorites and carefully lifts them onto their plate with chopsticks.

Hot pot in China is highly regional, mainly because of how ingredients differ between east to west and north to south. The differences also lie in what meat is used, the type of soup base, and the sauces and condiments used to add flavor.

北 方 涮 肉

Instant-boiled Mutton



Instant-boiled mutton is often considered definitive of northern hot pot.


提起北方火锅,就不得不提涮羊肉。


In some traditional restaurants, you can still enjoy this in the old-fashioned way — a large brass vessel is heated with burning coals and the broth is boiled in a deep, donut-shaped bowl surrounding a chimney.


在一些老字号餐馆里,你仍然可以用老方法涮羊肉——铜锅的中心是烧着炭的炉,肉要在甜甜圈形状的锅里涮着吃。


It focuses on the freshness of the meat, and the soup base is usually clear and tasteless.

Spicy Hot Pot



What makes the spicy Sichuan hot pot so popular is that the soup base is very important.

With the help of fiery chili peppers and Sichuan peppercorns, the soup base usually has a numbing and spicy flavor.


四川火锅的汤底里加了辣椒和花椒,因此味道又麻又辣。


The most famous variation is Chongqing hot pot. It is distinguished by the extremely spicy peppers added to the broth, which may be too hot for some first-timers to handle.


其中最有名的一种是重庆火锅,特色就是汤底中加入的无敌辣椒,让很多初尝者望而却步。


菊 花 锅

Chrysanthemum Hot Pot



Popular in eastern China's Suzhou and Hangzhou, chrysanthemum hot pot was originally popular on the Double Ninth Festival, which takes place when the weather turns cool and chrysanthemums bloom during the ninth month of the lunar calendar.


菊花锅在苏州和杭州地区广受欢迎。最初人们是在重阳节的时候吃菊花锅,因为阴历九月的时候天气转凉,菊花开放。


The main materials in the pot are fresh fish, which are boiled with chicken soup and chrysanthemum. The soup tastes especially fresh and delicious, and it has a high nutritional content too.


菊花锅的主要原料是新鲜鱼类,汤底则是鸡汤加上菊花,味道鲜美且营养价值高。


椰 子 锅

Coconut Hot Pot



In Sanya, a city in the south of Hainan island, instead of spicy chili, oil or beef fat, coconut water is poured in the pot with chopped chicken and coconut meat. 


海南三亚的火锅里放的不是辣椒,植物油或牛油,而是椰子汁。火锅的原料还包括鸡块和椰子肉。


The soup tastes a bit sweet from the coconut water and the corn, and the chicken is extremely tender and juicy with a slight fruit flavor.


椰子汁和玉米给火锅增添了甜味,而鸡肉则鲜嫩多汁,还带有一点果香。

Fondue is a Swiss dish of melted cheese which is served over a portable stove. People savor the creamy flavors by dipping pieces of bread into the melted cheese with long-stemmed forks.

Sukiyaki is one of the most well-known Japanese hot pot dishes. It is served in small amounts and the ingredients are mixed together in a shallow iron pot.

At traditional inns in Japan, there comes a new type of hot pot — and the amazing part is that the pot is made of paper! 


日本的传统客栈里最近兴起了一种全新的火锅,最令人称奇的是用纸做的锅。


Don't be afraid of it catching fire. As long as there is water in the pot, the paper will not burn; and since the paper pot is rather thin, the heat will spread evenly and cook the food quickly. 


别担心会着火哦。只要锅里有水,纸就不会烧起来。而且因为纸锅很薄,可以均匀受热,快速烹饪食物。


雪 顶 冰 锅

Ice Hot Pot with Snow Crab



Singaporeans have their own unique hot weather hot pot. The ice hot pot does not have chilled seafood swimming in an ice cold broth. Instead, the ingredients are presented with a mountain of shaved ice on top to keep them fresh. 

新加坡人也有为降暑应运而生的火锅。雪顶冰锅并不是冷汤和冷海鲜,而是用小山一般的碎冰压住食材以保证新鲜。

It will take about 15 minutes for the heap of ice to melt away, revealing a medley of ingredients such as red shrimp, salmon, chicken, and vegetables.

开火15分钟以后,小冰山慢慢融化,映入眼帘的就是红虾,三文鱼,鸡肉和蔬菜等琳琅满目的食材了。
