§ 169.140 蛋黄酱。

（一） 描述。 蛋黄酱是由植物油、本节(b)段规定的一种或两种酸化成分以及本节(c)段规定的一种或多种含蛋黄成分制成的乳化半固体食品。部分。也可以使用本节(d)段中指定的一种或多种成分。所使用的植物油可包含段落(d)(7)中指定的可选结晶抑制剂本节的。制造食品的所有成分均应安全且合适。蛋黄酱含有不少于65%重量的植物油。蛋黄酱可以在空气全部或部分被二氧化碳或氮气置换的气氛中混合和包装。

(二) 酸化成分。

( 1 )任何醋或用水稀释至酸度（以乙酸计算）不低于重量百分比2 1 ⁄ 2的任何醋，或任何此类醋或稀释醋与(d)段中指定的可选酸化成分混合6)本节。就本段而言，任何两种或多种醋的混合物都被视为醋。

( 2 )任何适当形式的柠檬汁和/或酸橙汁，可以用水稀释至酸度（按柠檬酸计算）不低于重量百分比2 1 ⁄ 2 。

（三） 含有蛋黄的成分。 液体蛋黄、冷冻蛋黄、干蛋黄、液体全蛋、冷冻全蛋、干全蛋或本段中列出的任何一种或多种前述成分与液体蛋清或冷冻蛋清。

（四） 其他可选成分。 还可以使用以下可选成分：

( 1 )盐。

( 2 )有营养的碳水化合物甜味剂。

( 3 )任何香料（藏红花或姜黄除外）或天然调味剂，只要它不会赋予蛋黄酱模拟蛋黄颜色的颜色。

( 4 )味精。

( 5 )螯合剂，包括但不限于EDTA二钠钙(乙二胺四乙酸二钠)和/或EDTA二钠(乙二胺四乙酸二钠)，可用于保留颜色和/或风味。

( 6 )柠檬酸和/或苹果酸的量不大于醋或稀释醋的酸重量的25%，以乙酸计算。

( 7 )结晶抑制剂，包括但不限于氧化硬脂精、卵磷脂或脂肪酸的聚甘油酯。

（五） 命名法。 食物的名字是“蛋黄酱”。

§ 169.150 沙拉酱。

（一） 描述。 沙拉酱是由植物油、本条(b)款规定的一种或两种酸化成分、本条(c)款规定的一种或多种含蛋黄成分制成的乳化半固体食品。部分，以及按照本部分（e）段的规定制备的淀粉糊。也可以使用本节第(e)段中的一种或多种成分。所使用的植物油可包含段落(e)(8)中指定的可选结晶抑制剂本节的。制造食品的所有成分均应安全且合适。沙拉酱含有不少于30重量％的植物油和不少于相当于4％液体蛋黄重量的蛋黄固体含量的含蛋黄成分。沙拉酱可以在空气全部或部分被二氧化碳或氮气置换的气氛中混合和包装。

(二) 酸化成分。

( 1 )任何醋或用水稀释的醋，或与本节(e)(6) 段中指定的可选酸化成分混合的任何此类醋或稀释醋。就本段而言，任何两种或多种醋的混合物都被视为醋。

( 2 )任何适当形式的柠檬汁和/或酸橙汁，可以用水稀释。

（三） 含有蛋黄的成分。 液体蛋黄、冷冻蛋黄、干蛋黄、液体全蛋、冷冻全蛋、干全蛋或本段中列出的任何一种以上前述成分与液体蛋清或冷冻蛋清。

（四） 淀粉糊。 它可以由食品淀粉、食品淀粉改性的、木薯粉、小麦粉、黑麦粉或这些中的任意两种或更多种来制备。在制备糊剂时可以添加水。

( 7 )螯合剂，包括但不限于EDTA二钠钙(乙二胺四乙酸二钠)和/或EDTA二钠(乙二胺四乙酸二钠)，可用于保留颜色和/或风味。

§ 169.175 香草精。

（一）香草精是从香草豆中提取的具有味道和气味的成分的乙醇水溶液。在香草提取物中，乙醇的含量不低于 35%（体积），并且香草成分的含量（如第 169.3(c) 条中定义）不少于每加仑 1 个单位。香草成分可以直接从香草豆中提取，或者可以以浓缩香草提取物或浓缩香草调味料或浓缩成称为香草油树脂的半固体形式的香草调味料的形式添加。香草精可能含有以下一种或多种可选成分：

( 1 )甘油。

( 2 )丙二醇。

( 3 )糖（包括转化糖）。

(二)

( 1 )该食品的指定名称为“香草精”或“香草精”。

( 2 )当香草精全部或部分由香草油树脂、浓缩香草精或浓缩香草调味料稀释制成时，标签上应注明“由______制成”或“部分由______制成”，空白处填入酌情使用“香草油树脂”、“浓缩香草提取物”或“浓缩香草调味料”的名称。如果物品含有两个或两个以上香草成分单位，则食品名称应包含“__-倍”标记，空白处填写表示每加仑香草成分单位数的整数（不考虑分数）文章的。

( 3 )如果食品名称出现在标签上，且在通常购买条件下很容易看到，则本节(b)(2)款要求的标签应立即且明显地出现在该名称之前或之后，不得插入书面文字。 、印刷品或图形材料。

§ 169.176 浓缩香草精。

（一）浓缩香草精符合身份定义和标准，并符合第169.175 条规定的香草精成分标签声明的任何要求，但经过浓缩以除去部分溶剂，且每加仑含有两个或更多单位§ 169.3(c)中定义的香草成分。乙醇含量不低于35体积％。

(二)食品的指定名称为“浓缩香草精__倍”或“浓缩香草精__倍”，空白处填入整数（不考虑分数），表示每加仑食品中香草成分的单位数文章。（例如，“浓缩香草精 2 倍”。）

§ 169.177 香草调味品。

（一）香草调味料符合定义和特性标准，并符合§ 169.175规定的香草提取物成分标签声明的要求，但其乙醇含量按体积计低于 35%。

§ 169.178 浓缩香草调味料。

（一）浓缩香草调味料符合定义和特性标准，并遵守§ 169.177规定的香草调味料成分标签声明的任何要求，但浓缩香草调味料是为了除去部分溶剂，并且每加仑含有两个或更多单位§ 169.3(c)中定义的香草成分。

(二)该食品的指定名称为“浓缩香草调味料__倍”或“浓缩香草调味料__倍”，空白处填入整数（不考虑分数），表示每加仑食品中香草成分的单位数文章。（例如，“浓缩香草调味料 3 倍”。）

§ 169.179 香草粉。

（一）香草粉是磨碎的香草豆或香草油树脂或两者的混合物，与以下一种或多种可选混合成分的混合物：

( 1 )糖。

( 2 )葡萄糖。

( 3 )乳糖。

( 4 )食品淀粉（包括本章第 172.892 条规定的改性食品淀粉）。

( 5 )干玉米糖浆。

( 6 )阿拉伯树胶。

香草粉可以含有本节(b)段中规定的一种或两种或多种抗结块成分的混合物，但任何此类成分或混合物的总重量不超过成品香草粉重量的2% 。每 8 磅香草粉中含有不少于 1 个单位的香草成分，如§ 169.3(c)中所定义。

(二)本节(a)段中提到的抗结块成分是：

( 1 )硅酸铝钙。

( 2 )硅酸钙。

( 3 )硬脂酸钙。

( 4 )硅酸镁。

( 5 ) Tricalcium phosphate.

(c)

(1) The specified name of the food is “Vanilla powder __–fold” or “__–fold vanilla powder”, except that if sugar is the optional blending ingredient used, the word “sugar” may replace the word “powder”. The blank in the name is filled in with the whole number (disregarding fractions) expressing the number of units of vanilla constituent per 8 pounds of the article. However, if the strength of the article is less than 2–fold, the term “__–fold” is omitted from the name.

(2) The label of vanilla powder shall bear the common names of any of the optional ingredients specified in paragraphs (a) and (b) of this section that are used, except that where the alternative name “Vanilla sugar” is used for designating the food it is not required that sugar be named as an optional ingredient.

(3) Wherever the name of the food appears on the label so conspicuously as to be easily seen under customary conditions of purchase, the labeling required by paragraph (c)(2) of this section shall immediately and conspicuously precede or follow such name, without intervening written, printed, or graphic matter.

(d) Label declaration. Each of the ingredients used in the food shall be declared on the label as required by the applicable sections of parts 101 and 130 of this chapter.

§ 169.180 Vanilla-vanillin extract.

(a) Vanilla-vanillin extract conforms to the definition and standard of identity and is subject to any requirement for label statement of ingredients prescribed for vanilla extract by § 169.175, except that for each unit of vanilla constituent, as defined in § 169.3(c), contained therein, the article also contains not more than 1 ounce of added vanillin.

(b) The specified name of the food is “Vanilla-vanillin extract __–fold” or “__–fold vanilla-vanillin extract”, followed immediately by the statement “contains vanillin, an artificial flavor (or flavoring)”. The blank in the name is filled in with the whole number (disregarding fractions) expressing the sum of the number of units of vanilla constituent plus the number of ounces of added vanillin per gallon of the article. However, if the strength of the article is less than 2–fold, the term “__–fold” is omitted from the name.

§ 169.181 Vanilla-vanillin flavoring.

(b) The specified name of the food is “Vanilla-vanillin flavoring __–fold” or “__–fold vanilla-vanillin flavoring”, followed immediately by the statement “contains vanillin, an artificial flavor (or flavoring)”. The blank in the name is filled in with the whole number (disregarding fractions) expressing the sum of the number of units of vanilla constituent plus the number of ounces of added vanillin per gallon of the article. However, if the strength of the article is less than 2–fold, the term “__–fold” is omitted from the name.
