肉鸭去毛、洗净、切块、去皮。放入料酒、生姜、蚝油、盐、酱油、多量糖一起腌大半个小时。
取柠檬、酸辣椒、酸姜、酸茭头,切丝。
冷锅放油加热(可以放入先前切下来的鸭皮炼油,炼好后去油渣),放姜块,把鸭块从碗里捞出来(注意现在不能把腌鸭块的汁倒进来)。炒至半熟,现在再把所有腌鸭块的汁料放入,继续炒。尝一下,根据口味加糖或柠檬汁或醋,炒好起锅。
很好吃的啊,可是,要用南方的青柠檬腌出来的柠檬才行,不是超市里的那种进口柠檬啊。所以春节回家的时候,我带了整整一瓶腌柠檬回来啊,够我慢慢做了。
