腌笃鲜,是一道江南地区常见的汤水,好像听人说是春天必喝的一种汤,腌是指咸肉,鲜就是春笋和鲜肉,至于笃应该是吴越那侬声细语所变化而来的吧腌笃鲜 <wbr> <wbr> <wbr>学做一道江南春日汤

我这北方妞,还是第一次尝试这腌笃鲜,主要为了解决冰箱里冻了好久的一块咸肉腌笃鲜 <wbr> <wbr> <wbr>学做一道江南春日汤,所以高手们尽管来拍砖,俺不知道啥叫正宗,看了不少前辈们做的,算是照虎画猫了~~腌笃鲜 <wbr> <wbr> <wbr>学做一道江南春日汤

 

 腌笃鲜   (北方主妇学做一道江南春日汤)

 

原料:咸肉一块、五花肉一块、葱姜适量、竹笋数根、豆腐皮适量

做法

1、咸肉用清水浸泡几个小时,清洗干净后切成小块备用,五花肉切成同样大小块备用,葱姜切片

2、豆腐皮改刀并打结(悲了个催滴,这里没有百叶结,只好自己捯饬点代替),春笋改刀切块

3、锅中放水,将咸肉和五花肉放水里开火加热几分钟,水烧开后一分钟然后捞出,换水后烧开将豆皮结和笋汆烫下,也捞出来沥干

4、取一砂锅,水烧开后,放入葱姜片、咸肉和五花肉,再次烧开后,用勺子将水表面的浮沫撇掉,然后转小火,慢慢炖煮一小时,等到汤色奶白后加入竹笋炖煮半小时,最后加入豆皮再熬煮一下即可关火

 

几个注意事项:

1、咸肉一定要事先泡水,真的太咸了(上次做了个菜饭,齁着了腌笃鲜 <wbr> <wbr> <wbr>学做一道江南春日汤

2、咸肉和五花肉要事先入锅飞水,去除杂质和血水,这样做好的汤口感好,笋和豆结也要下锅焯一下,去除豆结的豆腥味

3、煮汤时,一开始不用加盖,要等到水开后,锅里浮沫撇干净了,然后才能加盖子熬汤,水蒸气能带走肉的腥气,撇去浮沫,汤的味道更好

4、我放材料的顺序是这样的,先肉再菜再豆结(有条件的,还是要用百叶结),当然也可以放其他喜欢的材料

5、最后不用再放盐了,汤的咸味够了
