- cup all purpose flour
- teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- teaspoon salt
- cup mashed banana (use an overripe banana)
- 2 tablespoons butter, softened
- 1 cup unpacked brown sugar
- 1 teaspoon vanilla
- 1 large egg
- 2 cups old fashioned oats
- cup raisins

Instructions - Preheat oven to 350 degrees.
- In a small bowl, combine the firs six ingredients.
- In a separate bowl, cream together mashed banana and butter. Add sugar, vanilla, and egg and mix until combined. Gradually mix in flour and cinnamon mixture.
- Gently stir in oatmeal and raisins, then chill dough for at least 30 minutes.
- Scoop out dough onto a lightly greased cookie sheet. It should be roughly two heaping tablespoons of dough for each cookie, I got 15 cookies.
- Bake for 8-10 minutes or until tops are slightly golden brown. I left mine slightly under baked.
Notes I've made these cookies with dried cranberries instead of raisins and they were great! You could also mix in ? cup walnuts, pecans, etc.
