History and origins of Camembert

卡盟培尔是诺曼底地区的一个小村庄位于巴黎的西边。这座村庄坐落在富饶的奥格地区一座丘陵上位于盛产鳟鱼的维泰尔河上村庄围绕一座教堂建成。

Camembert is a small village in the Normandy region, west of Paris. The village, built around a church, is located on a hill in the fertile Ogg region on the trout-rich Vettel River.

在法国大革命期间(1789)所有的天主教牧师都必须效忠于新成立的共和国那些拒绝效忠的将被处死或是驱逐有些牧师则选择了躲在乡村等待时机。1790年十月Abbé Charles-Jean Bonvoust请求Marie Harel 藏身于名叫Beaumencel的农场这里是Brie布里奶酪的发源地接近巴黎也因奶酪而出名。为了感谢Marie Harel的收容他便传授给了她Camembert的秘方和做法。Marie Harel学会了制作这种奶酪并用了Camembert这个村子的名字。

During the French Revolution (1789), all Catholic priests were required to pledge allegiance to the new republic. Those who refused were executed or expelled. Some priests chose to bide their time in the countryside. In October 1790, Abbe Charles-Jean Bonvoust asked Marie Harel to hide at a farm called Beaumencel, the birthplace of Brie cheese near Paris and famous for it. To thank Marie Harel for taking her in, he taught her the secret recipe and recipe of Camembert. Marie Harel learned to make the cheese and took the name of the village Camembert.

Camembert is a mouldy cheese that takes about 3 weeks to make. The traditional method uses milk from Normandy cows, which is rich in lipids, proteins and vitamins. But how exactly it is made is now a closely guarded secret. Industrial Camembert is now produced in the Auge region, in Normandy, and in many parts of the world.

In the Normandy region of France, the most traditional Camembert cheese is produced, and its ingredients and processing are closely guarded by the French government. In 1983, Camembert de Normandie received designation of origin protection from the French government, the AOC mark, and later in 1992, the European Union designation of origin protection, the PDO mark.
